Orange Meringue Pie

1 Baked 9 in. pie shell

1 1/4 cups sugar

7 Tablespoons cronstarch

1/4 tsp. salt

1 1/2 cups warm water

3 eggs separated

1 Tablespoon grated orange rind

1/4 tsp. granted line or lemon rind

1/2 cup orange juice

2 Tablespoons lemon juice

2 Tablespoons butter or margarine

6 Tablespoons sugar

grated orange rind for garnish



Prepare and bake the pie shell. Mix the 1 1/4 c. sugar, cornstartch and salt in heavy saucepan, Stir in warm water. Bring to a boiling over low heat, stirring. Then cook stiring, 8-10 min. or until smooth and thickened. Remove from heat. Beat egg yolks slightly. Then stir in several spoonfuls of hot mixture. Return to saucepan and cook stiring, 4-5 minutes or until mixture bubbles up. Remove from heat. Stir in rinds, juices and butter. When butter is melted, pour mixture into pie shell. Beat egg whites until almost stiff. Gradually add 6 Tbsp. sugar, beating until stuff. Spoon lihgtly on pie, covering filling completly. Bake at 400 F for 4 min. or until golden brown. Cook. Garnish with grated onange rind.
