Mango Upside Down Cake
Here is one of the recipes from the book I was talking about last night. It sounds yummy to me, and if I can figure out what a calamansi is I might bake this.
2 1/2 cups Cake flour
1/2 cup butter melted
1 T. baking powder
1 tsp. salt
6 egg yolks
1/2 cup sugar
2/3 cup mango juice
juice from one calamansi
1/2 c. cooking oil
7 egg whites
1 tsp. cream of tartar
1 cup sugar
mango slices
cherries with whip cream
Line pan with wax paper. Brush with 1/2 cup butter. Sprinkle with brown sugar and T. mango juice. Arrange mango slices making a flower pattern. Pour in chiffon batter and bake for 45 minutes to 1 hour at 350. Cool and ice with butter frosting. Decorate with cherries and ice cream.
