It's Thursday again. Here is my 13 for this week.
Thirteen Things You Need To Make Chicken and Dumplings
1. 1 lb boneless chicken, cut up, coated with flour
2. 1/4 c. onion, chopped
3. 1 T. oil
4. 4 cans chicken broth
5. 3 potatoes, cut up
6. 2 carrots, cut up
7. 3 stalks celery, cut up
8. 3 tsp. Worcestershire sauce
9. 1/2 c. flour
10. 1/2 c. cold water
11. 4 strips cooked bacon, but into pieces
12. dumplings, either us frozen or bisquick mix
13. salt and pepper to taste
Cook chicken in a large sauce pan coated with a T of oil with the onion till done, or you see no pink. Add broth, bring to a boil and reduce heat and simmer 45 minutes. Add potatoes, carrots, celery and bacon. Simmer till vegetables are cooked. Add some water or more broth if your broth doesn't cover the veggies. Add salt and pepper to the Worcestershire sauce. In a small jar add water and flour. Shake well to mix. Slowly add to soup while stirring constantly. Soup will start to thicken. Add dumplings and cook till they are done. If using bisquick combine 2 cups mix and 2/3 c. milk, dumplings will take 20-25 minutes.
