Lemon Lime Squares
Crust:
2 c. flour
1/2 c. powdered sugar
1 c. butter, chopped into small pieces
1/4 c. chopped macadamia nuts
Lemon Lime Crud:
4 eggs
2 c. sugar
1tsp. baking powder
1 1/2 Tbsp. grated lemon zest
1 1/2 Tbsp. grated lime zest
3Tbsp fresh lemon juice
3 Tbsp fresh lime juice
For crust: Mix flour and chopped macadamia nuts and sugar. Mix in butter until the mixture resembles small peas. Using your hands, press the dough in the bottom and 1 1/2 inches up the sides of a lightly greased 13X9 inch pan. Bake at 350º in a preheated overn for 15 minutes or until the crust is firm to the touch.
For Crud: Mix flour and baking powder and set aside. Beat eggs until frothy. Stir in sugar, lemon zest, lime zest, lemon juice and lime juice; add to flour mixture until just blended. Pour into hot crust. Bake at 350º for 25 to 30 minutes or until set and top is lightly browned.
